Kick ladies’ night up a notch with Mimosa Cupcakes! A standard mimosa drink is made by mixing equal parts of orange juice and sparkling wine, or champagne. It is great to enjoy during bridal showers, weddings, or can even be used as a “hair of the dog” hangover cure.
Inspired by the drink, these cupcakes are made using an orange box cake mix and substituting equal amounts of champagne where the recipe normally calls for water. I love substituting champagne, beer, or soda in with my cupcakes. The carbonation does wonders for how moist they turn out!
Even though this is an adult recipe (due to the alcohol), you could easily substitute the champagne with sparkling grape juice if you want to make a more kid-friendly version.
Recipe For Mimosa Cupcakes, Guest Post
1 Box Orange Cake Mix
⅓ Cup Vegetable Oil
1 ⅓ Cups Champagne
Preheat oven to 375 degrees Fahrenheit.
Line a 12-hole muffin tin with cupcake liners.
Combine all ingredients above into a large mixing bowl and mix on medium speed until well blended.
Fill cupcake liners ¾ of the way full with batter.
Bake for 18-20 minutes.
Yields approximately 18 cupcakes.
I topped the cupcakes with my new favorite frosting, the Cool Whip Vanilla frosting. For an extra kick, try adding a ½ cup of orange juice in with your frosting and mix before you pipe it onto the cupcakes. Garnish with orange peels, orange slices, or mini-umbrellas.
These cupcakes would be a great addition to any bachelorette party, bridal shower, or even a nice surprise to take with you to your next book club. The possibilities are endless.
