I love Spring and everything that comes with it! The weather is warmer, birds are chirping, and my birthday is in April. This year, Easter Sunday is April 20th, which happens to be the day before my birthday. It’s not often these two occasions happen so close together. I remember when I was a little girl, Easter Sunday was actually ON my birthday once. It was exciting, fun, and I loved every minute of it.

I look forward to our Easter  Sunday dinner every year. When I was old enough to get my own apartment, I immediately claimed Easter as “my holiday” to host for the family. I spent days planning and shopping. Then, on the big day, cooking elaborate dishes to impress everyone. All of that time spent in the kitchen and it was all gobbled up within minutes. I could have, should have, been entertaining my guests instead.

Fast forward 20 years and three children later, I now know better. Simple, quick, and still delicious is definitely the way to go. The ham came with a simple set of serving instructions: “Our Hams are best served directly from the refrigerator. Simply unwrap, serve and enjoy.” As for the mashed potatoes: they can be heated in the microwave or placed on a cookie sheet in a conventional oven. The cake is best served at room temperature.

It doesn’t get any easier than that! Or does it?

  1. That ham looks so delicious!! I wish there was a location near me here in Maine. I’d love a quick, easy and delicious meal for Easter Sunday!

      The ham tasted as good as it looks! When I arrived at the store, they were in the process of glazing it. When she showed it to me before wrapping it up, I knew right then it wasn’t going to make it to Easter. It can be frozen for up to 45 days, but I served it for dinner last night and shared half of it with my parents. The portion you see in the photo is the half I kept. 🙂 I am sorry to hear there isn’t a HoneyBaked in Maine. I recommend sending them a note to let them know how much you would love for them to open a store near you. Good luck!
