I love Spring and everything that comes with it! The weather is warmer, birds are chirping, and my birthday is in April. This year, Easter Sunday is April 20th, which happens to be the day before my birthday. It’s not often these two occasions happen so close together. I remember when I was a little girl, Easter Sunday was actually ON my birthday once. It was exciting, fun, and I loved every minute of it.
I look forward to our Easter Sunday dinner every year. When I was old enough to get my own apartment, I immediately claimed Easter as “my holiday” to host for the family. I could have, should have, been entertaining my guests instead.
Fast forward 20 years and three children later, I now know better. Simple, quick, and still delicious is definitely the way to go. I drove to the location in Villa Park, IL and bought a Quarter Ham, Garlic Mashed Potatoes, and the Vanilla Rum Cake. I am so excited to share all of these with my family. The ham came with a simple set of serving instructions: “Our Hams are best served directly from the refrigerator. Simply unwrap, serve and enjoy.” As for the mashed potatoes: they can be heated in the microwave or placed on a cookie sheet in a conventional oven. The cake is best served at room temperature.
It doesn’t get any easier than that! Or does it?
